Here are a few of my favorite soup recipes using potatoes and squash. These recipes are easy, quick, made from scratch and can be adapted easily. Add whichever seasonings you choose. These soups can be hydrating, alkalizing, and fill you up with low calories but high nutrition. Enjoy!

Apple Squash Soup

Ingredients:

  • 1 tsp. or so extra virgin olive oil or whichever oil you prefer
  • 1 onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tsp. minced garlic
  • 1 tbsp. garam masala or curry powder or apple pie spice
  • salt and pepper to taste
  • 4 cups diced squash (zucchini, pumpkin, butternut –  whichever you choose). You can also used canned squash
  • 2 cup apples, chopped or apple sauce
  • broth ( bone broth or veggie broth) or water

Heat up oil in pot. Add diced onion, carrot, celery, salt, and pepper. Saute until onions are translucent. Add garlic and saute for about 2 mins. Add spice, squash, and apples. Cook for another minute to heat up spice. Add broth or water to cover. Bring to boil and cook until all veggies and fruit are soft. Taste to adjust seasoning. Turn off heat to stop boil. Add all to blender, food processor, or blend with an immersion blender until smooth. You can add sour cream or plain yogurt if you like. I personally like to keep my soups vegan – in which case, you can add coconut milk yogurt or other non-dairy sour cream or yogurt.

Curried Pumpkin Soup

Ingredients:

  • 1 tsp. or so extra virgin olive oil or whichever oil you prefer
  • 1 onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tsp. minced garlic
  • salt and pepper to taste
  • 1 tbsp. curry powder or to taste – I personally enjoy the taste so I add more
  • 6 cups diced fresh pumpkin or 2 large cans of pumpkin puree
  • broth (bone or veggie) or water
  • 1 can of coconut milk or 2 cups

Heat up oil in pot. Add diced onion, carrot, celery, salt, and pepper. Saute until onions are translucent. Add garlic and saute for about 2 mins. Add spice and pumpkin. Cook for another minute to heat up spice. Add broth or water to cover. Bring to boil and cook until all veggies and fruit are soft. Taste to adjust seasoning. Turn off heat to stop boil. Add all to blender, food processor, or blend with an immersion blender until smooth. Transfer back to pot and add coconut milk. Yummm my kids love this one.

Celery Soup

Ingredients:

  • 1 tsp. or so extra virgin olive oil or whichever oil you prefer
  • 1 onion, diced
  • 1 bunch of celery, diced
  • 1 large potato, diced
  • 1 garlic clove, minced
  • salt to taste or 1 tsp. lemon juice
  • white pepper to taste, or whichever pepper you have on hand
  • water or broth

Heat oil in pot. Add diced onion, celery, potato, salt, and pepper. Saute until onions are translucent. Add garlic and saute for about 2 mins.  Add broth or water to cover. Bring to boil and cook until all veggies are soft. Taste to adjust seasoning and add lemon juice. Turn off heat to stop boil. Add all to blender, food processor, or blend with an immersion blender until smooth. Low fat cream of celery soup. Very flavorful.

Potato Soup

Ingredients:

  • 1 tsp. or so extra virgin olive oil or whichever oil you prefer
  • 1 onion, diced
  • 3 carrots, diced
  • 1 celery stalk, diced
  • 5 cups diced potatoes, peeled
  • 1 tsp. minced garlic
  • salt and pepper to taste
  • 1 tsp. thyme
  • broth or water
  • 1 cup corn kernels
  • optional: green onion, bacon bits, smoke flavor, shredded cheddar(non dairy, if you prefer), sour cream (non dairy, if you prefer), fresh or dried parsley

Heat up oil in pot. Add diced onion, carrots, celery, potatoes, salt, and pepper. Saute until onions are translucent. Add garlic and saute for about 2 mins. Add thyme and cook for another minute to heat up. Add broth or water to cover. Bring to boil and cook until all veggies are soft. Turn off heat to stop boil. Taste to adjust seasoning. If adding liquid smoke flavor,add now. Add corn. Garnish with optional ingredients.
